Berwick’s Favourite Fall Cocktails to Make This Autumn

As the weather gets colder, we like to add layers (just as you would with clothing) and complexity to our weekly feature cocktails. The easiest way to do this is to start with a spirit, such as spiced rum or whiskey, that already has plenty of rich flavor. You can pair it with a taste of autumn, like cinnamon, nutmeg, clove, vanilla or ginger. Our Culinary Teams at Berwick have a lot of fun when it comes to creative weekly cocktails.

Here are a few of our Autumn flavours:

Berwick House: Sparkling Markijto – drink names are inspired by Mark, Director of Hospitality 

Ingredients

  • ½ oz of Rum

    ½ oz Simple Syrup 
    ½ oz Lime Juice
    4 oz Prosecco. 
    Mint

Directions

Muddle Mint, Simple Syrup, Lime Juice and Rum. Place in Shaker in Ice, shake then strain into Champagne Flute, fill the remainder of the flute with Prosecco. 

Berwick Royal Oak: It’s a Wonderful Life – featured drink names have a vintage movie theme. 

Ingredients

  • 1/4 cup (2 ounces) Empress Gin
    0.5 ounces St. Germain
    0.5 ounces Lemon Juice
    1 tablespoon Simple Syrup
    Lemon Wheel or Mint Leaves, to garnish
    Tonic, to top

Directions

Shake the gin, lemon juice, St. Germain and mint leaves on ice. Strain into a chilled red wine glass. Top with elderflower soda or tonic and garnish with a lemon wheel or mint spring.

Berwick on the Lake: Apple Maple Fizz – fall in a glass!

Ingredients

  • 1/4 cup (2 ounces) Empress Gin
    0.5 ounces St. Germain
    0.5 ounces Lemon Juice
    1 tablespoon Simple Syrup
    Mint Leaves, plus more to garnish
    Tonic, to top

Directions

Shake the gin, lemon juice, St. Germain and mint leaves on ice. Strain into a chilled red wine glass. Top with elderflower soda or tonic and garnish with a lime wheel or mint spring.

Berwick Parksville: Moscow Mule

Ingredients

  • 1/4 cup (2 ounces) Empress Gin
    0.5 ounces St. Germain
    0.5 ounces Lemon Juice
    1 tablespoon Simple Syrup

    Tonic, to top

Berwick on the Lake: Apple Maple Fizz – fall in a glass!

Ingredients

  • 2 ounces whiskey
    0.5 ounces fresh lemon juice (1 tbsp)
    0.5 ounces maple syrup
    3-4 oounces hard apple cider
    Apple slice and cinnamon for garnish

Directions

Shake whiskey, lemon juice and maple syrup in a cocktail shaker filled with ice. Strain into a glass filled with ice. Add hard apple cider and garnish with apple slice and cinnamon stick.

Berwick Comox Valley: Screwdriver 

Ingredients

  • 1 1/2 ounces vodka
    Orange juice, freshly squeezed, to top

Directions

Fill a highball glass with ice, then add the vodka. Top with the orange juice.

Berwick by the Sea: Cranberry Thyme Gin & Tonic

Ingredients

  • 1 1/2 oz. fluid Pure Cranberry Juice
    1 1/2 oz. fluid Gin
    1 1/2 oz. fluid Freshly Squeezed Clementine Or Orange Juice
    1 oz. fluid Simple Syrup
    3 sprigs (small) Fresh Thyme, Divided
    Crushed Ice, As Needed
    Cold Tonic Water, For Topping Off
    Fresh Cranberries For Garnish

Directions

In a 12-ounce glass, add cranberry juice, gin, clementine juice, simple syrup, and 2 sprigs of the thyme. With the back of a spoon, muddle the thyme against the inside of the glass. Add crushed ice to 2/3 full. Then top the remainder of the glass off with tonic water. Give a little stir to incorporate, and then garnish with the remaining thyme sprig and a few fresh cranberries.

Berwick on the Park: Peeping Ryan – variation of the Peeping Tom served with Aviation Gin (Ryan Reynolds signature gin) 

Ingredients

  • 1 1/2 ounces Aviation gin
    1/2 ounce creme de violette
    1 ounce lemon juice, freshly squeezed
    3/4 ounce simple syrup
    Garnish: 2 Peeps marshmallow candies

Directions

Add the Aviation gin, creme de violette, lemon juice and simple syrup into a shaker with ice and shake until well-chilled. Strain into a coupe glass. Garnish with 2 Peeps marshmallow candies.

Berwick Qualicum Beach: Maple Old Fashioned  

Ingredients

Directions

Use a vegetable peeler or knife to carefully cut a 2- to 3-inch-long piece of orange peel.  Run the pulp-side of the peel around the rim of the cocktail glass, then set the peel aside for later. Add the bourbon, bitters, and maple syrup to the glass, and briefly stir to combine.  Add the ice, then briefly stir the drink one more time to mix and chill. Give the orange peel a good twist above the glass to release its oils, then tuck it into the drink.
